Making PAVLOVA

Jen,  is a local baker in town, and her specialty is Macarons.

One day she made us something called PAVLOVA, and it was so good! Pavlova is a dessert named after a Russian Ballet dancer from the 1920s.

On Monday I went to visit with her, and she taught me how to make Pavlova. She even shared her recipe with me, and here it is:

6 egg whites pinch cream of tartar 1/4 tsp salt 1 1/2 tsp cornstarch 1 tsp champagne or white wine vinegar 1 1/2 tsp vanilla extract 1 1/14 cup sugar

First we cracked the 6 egg whites into a bowl. I had to make SURE that we didn't get ANY YOKES in the bowl! That didn't go too well at first, so we started over! That worked better the second time.

The secret to Pavlova is that Organic Eggs work better to make a nice meringue. You can get some nice eggs here: http://thelittlelocavore.blogspot.ca/2013/02/black-bettey.html.

Then we did the following:

Add cream of tartar to egg whites. Begin to beat the egg whites adding sugar slowly till fully incorporated and soft peaks form.

Add cornstarch and salt and continue beating until stiff peaks form.  Gently fold in vanilla and vinegar.
 
To make mini pavlova's divide batter up into 4-5 round discs. Put each on parchment paper and place in oven for 1 hour and 20 minutes.

Oven should be at 250 degrees. Once finished baking leave in the oven for 2 hours and then top with whip cream, Strawberries and Kiwi. Enjoy!
