In The Kitchen with Zachary Donohue

February is #nationalhotbreakfastmonth! So my friend Zach Donohue came over, and we made some Savory Waffles & Avocado Salad!

We chose this dinner because, well, who doesn’t like waffles?!

As athletes we need to cover all the bases in our diets, and this meal has: carbs & protein (in the waffles), as well as good fat from the avocado salad!

Here’s what you’ll need:

Bacon cheddar waffles:

  • -1 lb cooked bacon, chopped

  • -1 to 2 cups shredded cheddar cheese

  • -2 cups milk and 1/4 cup apple cider vinegar (stirred)

  • 1/2 cup butter (melted)

  • 2 eggs

  • 1/2 tsp vanilla (optional)

  • -2 cups AP flour

  • -2 tsp baking powder

  • -1 tsp baking soda

  • -1/2 tsp salt

  • 1/2 cup sugar

In a large bowl, add all the wet ingredients and mix well. In a separate smaller bowl mix all the dry ingredients.

Gently mix the dry ingredients into the wet.

Once the batter is thoroughly combined, fold in the chopped bacon, cheddar, and chives.

A huge thank you to Breville Canada for sending me the new Smart Waffle Pro! I cooked the waffles using the Buttermilk setting (see video).

AVOCADO SALAD:

  • -3 avocados, cubed

  • -2 mangos, cubed

  • -1/4 red onion, minced

  • -1 jalapeño, seeded and minced

  • -1 tomato, cubed

  • -Juice of one lime

  • -Salt and pepper TT (to taste)

Combine all the ingredients in a bowl and gently fold together, as not to mash the avocado.
